Hi, I’m JO PIGGY. Euljiro's busy streets can quiet down the moment a bowl of cold noodles lands in front of you. Pyongyang naengmyeon doesn't always shout on the first sip. Give it a few and it may start a very persuasive conversation.
The noodles usually contain buckwheat and sit in a chilled broth. Some bowls lean toward beef; others brighten the mood with dongchimi, a mild fermented radish brine. Taste the broth before adding vinegar or mustard. First dates with food do not all need fireworks.
Here are three distinct bowls selected from the reviewed candidates, with Korean bloggers doing the talking.

1. Woo Lae Oak
Near Euljiro 4-ga, this is the meat-broth route into Pyongyang naengmyeon. Reviewers praise the fragrant beef broth, buckwheat noodles and a little sweetness from pear garnish. It is the bowl to try if 'subtle' sounds good but 'barely there' does not.

2. Nampo Myeonok
Near Euljiro 1-ga, dongchimi's gentle tang gets more of the spotlight. Reviewers pair the clean broth and nutty noodles with dumplings or sliced beef. It is a useful reminder that not every cold noodle bowl needs to flex its beef muscles.

3. Pyeongraeok
Here the cool, restrained noodle soup comes with a tangy chicken salad on the side. Alternate a quiet spoonful with a bright bite of chicken: the bowl has its own volume control.

One last bite
Woo Lae Oak for the beefy entrance, Nampo Myeonok for dongchimi's lift, or Pyeongraeok for the chicken-salad duet. The goal is not to graduate as a cold-noodle expert. Finding your own favorite broth is plenty.
